The Protein Bread Co
The protein bread co have done an amazing job at providing a low carb solution to typically high carbohydrate food sources. My friend Luke has been putting together some amazing products that turn out beautifully mixed ingredients that require no fuss.
This low carb berry muffin mix is one of their products, along with many others. I am such an advocate for not only their ingredients, but also jus the ease of use.
Sometimes recipes take so many different ingredients, that by the end you feel like you have constructed a wedding cake, but in reality you have only made a bacon, avocado and egg concoction. The protein bread co’s packet mixes are super healthy, super easy and turn out delicious!
I’ve also used their Low Carb Pizza Base mixture before, and I have to say, it turns out better than the normal keto pizza type base.
This is a Low Carb Snack Sensation suitable for lunch boxes, snacks or a quick breakfast as you run out the door.
Here is the packet mix I used. Absolutely fantastic!
Low Carb Blueberry Muffin
Ingredients
- 4 large Eggs
- 200 ml Coconut Milk
- 250 g Frozen Blueberries Or Raspberries
- 1 Packet Protein Bread Co Muffin Mix
Instructions
- Open the Protein Bread Co Muffin Mix and place the contents into a large mixing bowl.
- Add the eggs and milk, mix until smooth. Fold the berries into the mixture and pour into muffin tins. Should make 8 Big muffins, or 6 Big muffins and 4 small muffins.
- Bake for 24 mins at 180 degrees C (360 f)
