Using Gelatin For Gut Health

You might be used to using gelatin in cooking, but you probably haven’t used it for gut health?

Gelatin powder is actually hydrolysed collagen and can have an impact on your skin health, sleep, and mental health as well. The beneficial aspect of gelatin comes mainly from its glycine content.

If you are a strict carnivore, or you eat plenty of meat and animal products, you will have high methionine levels which in turn, boost your homocysteine levels. High homocysteine levels are a risk factor for serious diseases like heart disease, stroke, mental illness, and fractures.

Consuming plenty of gelatin will help balance out your homocysteine levels because glycine is able to neutralise homocysteine.

Gelatin also has a healing effect on your gut health by restoring a healthy mucosal lining in the stomach and aiding in gastric acid secretion.

I won’t go on too much about the benefits of glycene here too much, but just know that if you’re having trouble with your skin, sleep, joints or mental health, gelatin is going to be able to help.

Best Keto Electrolyte Powder

I have tried many electrolyte powders, and there are many pros and cons to using certain brands. The biggest factors that you might be concerned about when it comes to a ketogenic diet is:

  1. Is it low carb? (since carbs are a precious commodity on keto)
  2. Is it affordable? (as you’ll likely be taking it daily)

There are a few different brands that I tend to recommend to my clients, plus there is a homemade version which you can make using ingredients you might already have:

Ultima Electrolytes

Pros – I haven’t used ultima for a long time, but in my short experience, the flavours taste amazing. They are sweetened with natural stevia, which is fantastic because it doesn’t contain sugar alcohols, and they come in single servings or big tubs, depending on your preference.

Cons – They aren’t cheap, and if you live in Australia, you’ll likely have to by them online (postage can add up).

Endura Low Carb Electrolytes

Pros – I used this electrolyte drink extensively whilst training for my keto marathon, and it was great! Most sports stores will have this in stock, so you’re saving on postage, and it tastes fantastic also. It’s about mid-range in terms of cost, so this could definitely be an advantage over Ultima.

Cons – They only have 2 flavours (to my knowledge), so you might get over that taste quite quickly.

Homemade Electrolytes

Recipe:

  • 1 cup of water
  • 1 tsp lemon juice (Limonoids have anti-cancer properties)
  • 1 Tbsp Apple cider vinegar (for its beneficial effect on blood sugar levels)
  • 1/4 tsp cream of Tatar (which is potassium)
  • 1/4 tsp baking powder (which is mainly calcium)
  • 1/2 tsp salt (sodium)
  • Optional liquid stevia drops for sweetness

You will also need to supplement daily with magnesium if you chose this option.

Pros – This option is cheap and highly accessible. You probably have everything you need (maybe except for cream of Tatar), so you can start today. You have the option of dialling up or down certain micronutrients if necessary, so it’s a more custom friendly option.

Cons – It tastes really bad. There is no way around this, it won’t taste good. However, if you’re living life on the cheap side, this is your best option.

Other Keto Electrolytes

Here are some other electroytes which I have done research on, but never tried:

  • Bulk Nutrients Carb Free & Sweetener Free Electrolytes (apparently tastes bad also, but I would expect it to taste similar to the homemade recipe)
  • Aldi has an electrolyte supplement which is cheap, but it contains 2g of carbs per serve, so this may not be a great option for everyone
  • Hydralyte also does an electrolyte supplement which you can easily get at coles and Woolworths, but again, contains 2-4g of carbs per serve I believe.

Why Use Electrolytes For Keto?

When you go keto, the body no longer stores as much glycogen (energy from carbohydrates), which reduces the amount of water the body can hold.

The downside of reducing your glycogen levels is that you might lose many important minerals when water weight is reduced. This means that you have to pay close attention to your electrolytes on a ketogenic diet.

Ensuring that you drink electrolytes on a regular basis can help ward off nasty side effects of being in ketosis such as headaches, muscle cramps, joint pain and lethargy (all typical symptomps of dehydration or mineral imbalances)

Best Way To Get Electrolytes On Keto

Honestly, I love making this jelly recipe for meal prep, especially if I’m going through a weight loss phase. I used this jelly recipe a lot when I went from 25% body fat to 15% body fat this year.

  • Will keep for 2 weeks in the fridge.

Using Fresh Free Range Eggs

Lemon is such a fantastic colour, combined with the yolks of a few homegrown chicken eggs, its such a vibrant yellow colour!

This comes entirely from the colour of the lemons and the egg yolks, so if you’re looking for a vibrant colour in your curd, it is best to use good quality fresh free range eggs.

The colour of egg yolks usually depends more on a chickens diet more so than the quality of it’s life, however by buying good quality eggs, you are supporting quality farms, they are better for you, and better for the chickens.

Instructions

  • Grab a medium heatproof bowl and squeeze the lemons, zest the skin, add the natvia (or erythritol) and add the butter. Set the bowl over a pan of gently simmering water. Don’t let the bowl touch the bottom of the pan. Stir the mixture until all the butter has melted.
  • Lightly whisk the eggs and egg yolk, then stir into the heated mixture. Stir and cook for around 10 mins until the mixture coats the back of a spoon.
  • Remove from the heat and put the mixture into sterilised jars and store in the fridge for up to 2 weeks.

This keto version of a blueberry cobbler takes away all the bad sugar and carbs. Making use of alternatives like erythritol as a sweetener, and almond and coconut flour for the batter does the trick. With all the substitutions going around, this dessert still tastes as good as the traditional ones!

Baking Tips for Making this Keto Blueberry Cobbler

  • Melt the butter. The butter should be cooled to room temperature before mixing.
  • Room temperature. Make sure the egg, as well as the butter, are at room temperature.
  • Mix all the dry ingredients together first. This will ensure that the xanthan gum and baking powder are evenly distributed through the mix, allowing a more evenly baked cobbler scone topping.
  • Almond flour. Choose regular almond flour over superfine. Superfine works but the scone mix will be flatter. Don’t expect this dough to rise as non-low carb type scones would. It’s not meant to, but that won’t take away from the fact that the dough is delicious, rich and buttery, like the real deal!
  • Fresh or frozen blueberries. You can totally use fresh or frozen berries. Feel free to substitute the blueberries for raspberries, blackberries or strawberries (or a mix of). Just be mindful that the berries you use will alter the net carb count.

    • 1 tbsp unsalted butter
    • 4 cups fresh or frozen blueberries 600 g
    • 1/3 cup granular erythritol 66 g
    • 1 tsp lemon zest
    • 1/2 tsp xanthan gum

    METHOD

    • For the filling, preheat the oven to 320 F/160 C/140 fan.
    • Place the butter in a 10.5 x 7.5 x 2-inch (26.5 x 19 x 5-cm) oven-proof dish. Place in the oven to melt and then use to grease the dish. Allow any remaining butter to sit in the bottom of the dish.
    • Add the blueberries, erythritol, lemon zest, xanthan gum, and cinnamon (optional), and stir to combine.
    • Bake in the oven for 15 to 20 minutes.
    • For the topping, add the almond flour, erythritol, coconut flour, baking powder, xanthan gum, and salt to a mixing bowl and mix to combine. Cut the butter into small cubes and rub through the dry mixture until you have a fine crumb. Alternatively, you can pulse the mixture in a food processor to make it quicker.
    • Add the almond milk and roughly half the egg to the dry mixture, and stir to combine. Using your hands, knead the mixture to form a smooth dough. If the dough is too sticky, add some additional almond flour, and if the dough is too dry, add some almond milk.
    • Roll the dough between two sheets of greaseproof paper until it is 1-inch (2.5 cm) thick. Cut out cobbler scones using a 2.5-inch (6.3 cm) round cookie cutter. Re-roll the dough scraps, cutting the scones until all the dough is used up. You should get about 7 thick scones. If you would like to increase the number of scones, simply roll the dough thinner but keep an eye on them during cooking as they may need less time.
    • To assemble, give the blueberries a stir. Place the scones on top and glaze with the remaining egg.
    • Transfer the cobbler back to the oven and bake for a further 20 to 25 minutes until the scones are golden.
    • Serve with keto ice cream, yogurt, coconut yogurt or whipped cream.

    • 1/2 Cup Almond Milk
    • 1 Cup thickened cream
    • 1 tsp vanilla bean or 2 tsp Vanilla extract

    • Combine milk and cream in a medium saucepan.
    • Using a sharp knife, split the vanilla bean in half lengthways and scrap out seeds with the back of the knife.
    • Add vanilla seeds to the milk and cream mixture. Bring the saucepan to a simmer, stirring constantly for 5 minutes or until hot (do not allow to boil). Remove saucepan from the heat.
    • Whisk the egg yolks xanthan gum and erythritol in a bowl, pour the warm milk mixture over the egg yolks, whisking constantly.
    • Return mixture to the saucepan over low heat, and cook for 15-20 mins stirring constantly until the mixture coats the back of a spoon.
    • Serve warm or cold.

    I always wondered how to make chocolate pudding, and it turns out its really easy. This chocolate pudding recipe takes a classic dessert and adds a hint of creamy espresso for all you coffee lovers out there. Coffee is well suited to the sweet tastes, often balancing out the crisp bitterness of the coffee bean.

    You could use instant espresso in this recipe, but for best results I suggest you use an espresso maker, or an espresso from your local coffee shop. Filtered coffee adds too much water and can result in a runny texture. You want quick and easy chocolate recipes, not soft and runny cocoa soup.

    • 1⁄2 cup unsweetened cocoa
    • 1/2 cup sugar substitute
    • 1 oz. shot espresso 30 ml
    • 1/2 tsp xanthan gum
    • 1 1/2 cups heavy whipping cream

    Instructions

    • In a small saucepan, slowly heat up the heavy cream whilst adding the cocoa, expresso, and the sugar substitute.
    • Once the cocoa and sugar has mixed in, add the xanthan gum and slowly bring to simmer.
    • Once the mixture starts to become thick, remove from the heat, place into ramekins (or bowls) and chill for 1 hour.

    Notes

    You could use instant espresso in this recipe, but for best results I suggest you use an espresso maker, or an espresso from your local coffee shop. Filtered coffee adds too much water and can result in a runny texture. You want quick and easy chocolate recipes, not soft and runny cocoa soup.
